Muffins: Cheese & Zucchini
2/3 cup SR Flour
1 cup vegetables (grated zucchini, corn, fresh herbs)
1/2 cup tasty cheese
1/3 cup milk (or less)
20g butter, melted
Parmesan cheese, grated
- Place flour in mixing bowl, stir in grated vegetables and cheese. Mix well.
- Whisk milk and eggs together and add melted butter.
- Pour into the flour mixture and stir gently until just incorporated.
- Divide evenly into muffin tins, top with Parmesan cheese and bake 20-25 minutes or until golden brown and cooked through.
