Muffins: Cheese & Zucchini

  • 2/3 cup SR Flour

  • 1 cup vegetables (grated zucchini, corn, fresh herbs)

  • 1/2 cup tasty cheese

  • 1/3 cup milk (or less)

  • 1 egg

  • 20g butter, melted

  • Parmesan cheese, grated


  • Place flour in mixing bowl, stir in grated vegetables and cheese. Mix well.
  • Whisk milk and eggs together and add melted butter.
  • Pour into the flour mixture and stir gently until just incorporated.
  • Divide evenly into muffin tins, top with Parmesan cheese and bake 20-25 minutes or until golden brown and cooked through.
